“Akki Rotti ” actually needs no intro to any kannadiga.This is the simple and easy recipe prepared with rice flour and veggies of your choice and served with chutney / mango pickle. It's healthy breakfast for kids too.Great for lunch box as it taste good even when its cold .I like thin and crispy akki rotti so we need to pat it as thinly as possible and remember to smear some amount of oil over the rotti to make it crispy and tasty.
Ingredients
2 cups rice flour / akki hittu1 onion finely chopped
2 carrots gratted
2 tbsp grated coconut
1/4 cup Sabsige sappu/ Shepu/ Dill leaves finely chopped
2 green chilli finely chopped
few coriander leaves finely chopped
few chcopped curry leaves
1 tsp cumin seeds /jeera
salt to taste
oil for roasting
Warm water as required
Method
1. In a large mixing bowl, combine rice flour, carrot, onion, coriander leaves, chilli, , salt and cumin seeds.
2.Mix well or crumble the above mixture well
3.Add in required water to make a soft dough.
4.additionally, add more water if required and make smooth and soft dough.
5.Now take a small ball of dough and start patting over oiled baking sheet or banana leaf.
6.Pat as thinly as possible, dip your hand in water so that you can spread easily and avoid from having cracks.
7.Make some holes between so that your rotti can absorb oil and cook fast.
8.Grease the tava with oil and gently drop the sheet upside down over the hot griddle.
after a minute, peal off the baking sheet slowly without breaking your akki rotti.
9.Smear some oil over the rotti and cook on medium flame, flip over and cook both sides.
10.Serve the roti hot with chutney or pickle of your choice.
